A portion of the nitrate consumed in drinking water is converted to nitrite in the body. Nitrite can react in the body with secondary amines, amides, and carbamates to form N-nitroso compounds, several of which are potential human carcinogens. Does nitrate in drinking water lead to an increased risk of cancer? Several studies summarized here have attempted to answer this question. Includes 13 references.
